This course provides E-4 through E-5 Food Service Specialists with instruction and application of laws, regulations and policies related to independently managing their small Coast Guard Dining Facility. Students will also receive three weeks of training which will also include one week training on the new Dining Facility Automation Management System (DFAM) and allow them to perform all duties required to run a Dining Facility.

The course introduces baking science, terminology and complex ingredients functions through lecture, demonstration, and provides a fast paced hands-on production of specialty products (e. g., tortes and cakes, cookies, pies, French pastry, assorted yeast products, chocolate, sugar artwork, and decorative pieces

This one week baking program is a combination of Basic Baking Techniques Course, Bread Making Course, and Intermediate Pastry Production Course. It includes production of assorted yeast raised products, quick breads, muffins, Danish, turnovers, cake decoration, assorted pastries, pies and cookies.
